Thai Curry Noodle Soup

I REALLY suck at cooking, but oddly enough I think I’m better at creations when I haven’t been grocery shopping in a couple of weeks.  I guess when there’s nothing in the refrigerator I turn to finding anything and everything I can put together.  Today it was a high of 10 degrees (much lower with the windchill) so I was craving something warm.  Pulled open the pantry and stared for awhile…. Well, I love spicy… I love Ramen noodles ( #DontJudge it’s the truth)… I want to be warm… But I want to eat better.. So the Ramen with Red Hot is out of the question.  Then it hit me… this amazing bowl of happiness was created

It may not look like a whole lot and that’s because it isn’t.  It took me all of about 7 minutes.  This fall I came across Millie’s Vegetable Sipping Broth through random scrolling and searching on Instagram.  I began creeping online and on Instagram trying to find more information and see what people were saying.  Thanks to the amazing Amazon Prime my (almost) instant gratification would ensue (I even paid the $3 for next day shipping).  Millie’s is a single serving steepable sipping broth created by a teacher that was looking for healthy snack choices between classes.  The broth is all natural, gluten free, low sodium, vegan, organic… everything you would want in a healthy broth without having to actually make it yourself.  Simply take one of the “tea bags” and steep in 8 oz. of hot water and boom, a delicious hot savory broth.  When it’s REALLY cold on days like today I’ll often just grab one throw it in a mug and enjoy.  I purchased the Thai Curry Spice, Spicy Tortilla & Tomato Basil and I’m pretty sure this Thai Curry Spice is my new favorite (today was my first time trying this one).

So how did I put today’s lunch together? I placed 3 of the Thai Curry Spice “tea bags” into a pot with water to boil.  I removed the herb bags and added rice noodles into the broth until fully cooked.  Of course I also drizzled a little bit of Sriracha on top for a little extra kick, because why not right?

In all honesty it was about 7 minutes from the moment I opened the package to sipping on this Thai Curry Noodle Soup.  Much healthier than sodium loaded Ramen noodles and fit my “warm & spice me up noodle soup” craving!
