Pepper Egg Bake

Non-Stick cooking spray

1 tbsp EVOO

1/2 diced onion

1 diced green bell pepper

1 tsp chili powder

1 tsp cumin

1 tsp garlic powder

6 Large Eggs

4 Large Egg Whites

1 + 1/2 cup Reduced Fat Shredded Cheddar cheese



Coat a baking dish with spray and preheat oven to 350 degrees.

Heat a skillet over medium high heat and put in 1 tbsp of EVOO.  Saute the ham, peppers & onion until water is evaporated about 5-7 minutes.  Add in spices and brown veggies (approx additional 5 minutes).  Take off of heat and let cool slightly. In a mixing bowl beat eggs and egg whites.  Add 1 cup of shredded cheese and the ham and peppers mixture, stir well.  Pour into baking dish and bake for approximately 25-30 minutes.  Sprinkle remaining half cup of shredded cheese to the top of the bake and cook for an additional 5 min.

Serve with salsa or plain greek yogurt if desired!
