Crockpot Chicken Burrito Bowl

I have to drive approximately 100 miles one way to get some Chipotle so I had to put my thinking cap on a little bit to calm my cravings for a Chicken Burrito Bowl.  VOILA… I give to you the Crockpot Chicken Burrito Bowl! (Best part of it all is that you don’t have to pay extra for your guac ;) )

  • 1 lb boneless skinless chicken breast
  • 1 packet of taco seasoning
  • 1 medium jar of medium salsa
  • 1 can rinsed black beans
  • 1 cup brown rice
  • Shredded Lettuce
  • Diced Tomatoes
  • Shredded Cheese
  • Sour Cream (optional)
  • Guacamole (optional)

Directions: Place chicken breasts in Crockpot (I actually put mine in frozen and they stayed a little juicer throughout the cooking process). Cover with jar of salsa. Sprinkle taco seasoning on top. Add black beans. Set Crockpot to low & cook for approximately 5 hours. Take chicken out and shred breasts. Mix shredded chicken back into Crockpot with salsa & bean mixture. Stir so chicken is evenly covered. Continue to cook on low for 1 hour. Cook brown rice.

Layer rice, chicken mixture, and top with lettuce, tomatoes, cheese, sour cream and guacamole. ENJOY!
