As an Italian girl, it really does pain me to have to cut back on carbs 80% of the time. Don’t get me wrong, I will shove some pasta in my face and enjoy every minute of it, but I would be a bloated mess if I did that ALL the time. And to top it off, I’m just not THAT into wheat pasta, if I’m going to eat it, I’m going to eat the real thing! So when I started seeing people swapping pasta for spaghetti squash, I was a definite skeptic, but it’s a great thing to make and freeze for future use in case you don’t want to eat it every day for every meal because one squash makes a TON. So the kicker is “How Do I Cook a Spaghetti Squash?” Well, that was my first question so I figured I should probably share it here in case others are curious as well.
How to Cook a Spaghetti Squash
Bake in the Oven
Now if you enjoy squash as much as I do, you know that it’s always a lose/lose battle when it comes to cutting those beasts open and a spaghetti squash really takes the cake. After trial and error this is the easiest way that I’ve found to cook a spaghetti squash.
Place your spaghetti squash on a flat cookie sheet. Preheat your oven to 375 and get ready to prepare your spaghetti squash.
Take a sharp pairing knife and pierce some holes into your squash. Once the oven has preheated, place the cookie sheet in the oven. There is no need to place water in a dish when baking your spaghetti squash unopened. Bake the spaghetti squash for about an hour or until it is soft enough to cut a knife through the skin to separate.
Cut your spaghetti squash in half (don’t forget to use oven mitts to hold on to the squash because that bugger will be pretty warm straight out of the oven). Once you have cut the squash in half remove the seeds and discard.
Grab a fork and “string” the squash. As you will see it will separate from the skin like spaghetti.
Italian Style Spaghetti Squash Recipe
Here you have the option to try different recipes that you may have found or are interested in trying. One of my favorites is super quick and I’ll share it with you here:
- 1 spaghetti squash baked and separated
- 1 large can of low sodium diced or stewed tomatoes (your preference)
- 2 tsp of minced garlic
- Pepper or other seasons to taste (I add a little bit of spicy Mrs. Dash or Red Pepper Flakes)
Place your tomatoes in a skillet and warm. Next stir in your spaghetti squash, garlic and seasonings. Saute in pan for 10 minutes on a low simmer to infuse the flavors. Serve and enjoy!
